Chocolate-Pumpkin Marble Cake with Cream Cheese Glaze
Ingredients:
Cake:
  • 1 1/4 cups pumpkin puree
  • 1 cup sugar*
  • 1 cup packed dark brown sugar*
  • 1 1/2 cups unsalted butter, softened*
  • 5 large eggs
  • 1 tsp. vanilla
  • 2 3/4 cups cake flour, divided
  • 3 tsp. pumpkin pie spice
  • 1 tsp. baking powder, divided
  • 1/2 tsp. baking soda, divided
  • 1 tsp. salt, divided
  • 3/4 cup Dutch-processed unsweetened cocoa
  • 1 1/3 cup regular or low-fat buttermilk, divided
*To make this healthier, you can reduce the sugars to 3/4 cup each and the butter to 1 cup. The cake won’t be quite as moist as it should be, but will still taste good.
Cream Cheese Glaze:
  • 1/2 cup powdered sugar
  • 4 oz. (1/2 cup) regular or low-fat cream cheese
  • 1/2 tsp. vanilla
  • 3-4 tbsp. milk (or more if you want a thinner glaze)
Instructions:
  1. Preheat oven to 350 degrees (F). Rub a 10 inch tube pan or 12-cup bundt pan with butter (or spritz with cooking spray) and dust with 1 tbsp. flour until the interior is covered. Tap lightly to shake loose extra flour. Set aside.
  2. Spread pumpkin puree over two layers of paper towels and press two more layers on top. Let sit for 10 minutes.
  3. Meanwhile, in a large mixer bowl cream butter until light. Add both sugars in a steady stream and mix on medium for about 5 minutes.
  4. Add eggs, one at time, mixing well after each. Add in vanilla.
  5. Transfer half of the mixture into another large bowl (another mixer bowl would be helpful, but any large bowl will work). Set aside.
  6. Scape the pumpkin off of the paper towel and add it to the first bowl. Mix well.
  7. In a smaller bowl combine 1 3/4 cup flour, pumpkin pie spice, 1/2 tsp. baking soda, 1/4 tsp. baking powder and 1/2 tsp. salt.
  8. Add half of the flour mixture to the pumpkin mixture and mix well. Mix in 1/3 cup buttermilk. Then add the remaining flour and mix until combined. Set aside.
  9. In the smaller bowl combine 1 cup flour, 3/4 cup cocoa, 1/2 tsp. baking soda, 1/4 tsp. baking powder and 1/2 tsp. salt.
  10. Add half of the flour/cocoa mixture to the other large bowl and mix well with a whisk or your mixer. Mix in 1 cup of buttermilk. Then add the remaining flour and mix until combined.
  11. Spoon 1/3 of the pumpkin batter into your prepared pan. Drop heaping spoonfuls of the chocolate batter around the pan (not completely covering all the pumpkin). Spoon in the remaining pumpkin and chocolate batters. Gently swirl a knife around the pan several times.
  12. Bake for 45-55 minutes or until a toothpick inserted in the center comes out with a few moist crumbs (make sure you’re checking in both the pumpkin and chocolate parts, I noticed large chocolate sections needed a few additional minutes). Cool in pan for 10 minutes, then remove from pan and cool for another 10 minutes on a rack.
  13. Meanwhile, to make the glaze, mix powdered sugar and cream cheese until well blended. Beat in vanilla and milk, 1 tbsp. at time. Drizzle on the warm cake. Let cake cool completely.

Ingredients:
  • ~3c cubed day old bread [not soft sandwich bread]
  • 2 flax “eggs” [2T ground flax meal + 6T warm water, whisked + let sit for 10min]
  • 3T pumpkin puree
  • 2T almond milk
  • 1T sucanat [cane sugar or brown sugar]
  • 1t cinnamon
  • 1/2t vanilla
  • 1/4t ginger
  • pinch of allspice/nutmeg/cloves/salt
Instructions:
- Preheat oven to 350*
- After flax “eggs” are ready, whisk in all other ingredients, in a large bowl.
- Add bread cubes and stir to coat with the batter.
- Spray individual bowls or pan [bread loaf size] with cooking spray. Also spray 1 side of foil that will cover the bowls/pan.
- Add bread cubes to bowls/pan, letting excess batter drip off.
- Cover with greased foil and bake for 25min.
- Uncover and bake an additional 5min.
- Top with bananas + nuts [optional] and broil for 1-3min, watching closely so it does not burn.
- Scoop out, top + serve!
*If you don’t want to eat this with any sweet toppings, I would suggest doubling the amount of sugar you mix into the recipe. The French toast alone is not very sweet.

  • 2 large eggs
  • 1 cup sugar
  • 3/4 cup all-purpose flour, spooned and leveled
  • 1/4 teaspoon kosher salt
  • 1/2 cup chopped walnuts

Instructions:


Heat oven to 350° F. Spray an 8-inch square baking pan with the nonstick spray. Line the pan with a piece of parchment, leaving an overhang on two sides; spray the parchment with the nonstick spray.
In a small saucepan, melt the butter and chopped chocolate with the espresso powder, stirring occasionally; remove from heat.
With an electric mixer, beat the eggs and sugar on medium-high until light and fluffy. Reduce speed to low and mix in the melted chocolate mixture, then the flour and salt just until incorporated. Fold in the walnuts and chocolate chips.
Spread the batter in the prepared pan and bake until a toothpick inserted in the center comes out clean, 30 minutes.
Cool completely in the pan. Holding both sides of the paper overhang, lift the cake out of the pan, transfer to a cutting board, and cut into 16 squares.

For crust:
  • 2 sticks unsalted butter, softened
  • 2/3 cup packed brown sugar
  • 2 2/3 cups all-purpose flour
  • ½ teaspoon salt

For topping:
  • 1 stick (½ cup) unsalted butter
  • 1 cup packed light brown sugar
  • 1/3 cup honey
  • 2 tablespoons heavy cream
  • 2 cups chopped pecans



Instructions:

Preheat the oven to 350ºF and line a 9x13-inch pan with foil, leaving enough for a 2-inch overhang on all sides.
First make the crust by creaming together the butter and brown sugar until fluffy in a stand mixer fitted with the paddle attachment. Add in the flour and salt and mix until crumbly.
Press the crust into the foil-lined pan and bake for 20 minutes until golden brown.
While the crust bakes, prepare the filling by combining the butter, brown sugar, honey and heavy cream in a saucepan and stirring it over medium heat. Simmer the mixture for 1 minute, then stir in the chopped pecans.
Remove the crust from the oven and immediately pour the pecan filling over the hot crust spreading it to cover the entire surface.
Return the pan to the oven and bake an additional 20 minutes.
Remove the pan and allow the bars to fully cool in the pan.
Use the foil overhang to lift out the bars and transfer them to a cutting board. Peel off the foil, slice into bars and serve.

  • 1-3/4 cup (1-1/2 pkgs) Chocolate Graham Crackers (crushed)
  • 1/3 cup Margarine (melted)
Filling:
  • 3-8 oz pkgs Cream Cheese
  • 1 can Sweetened Condensed Milk
  • 1/2 cup Sugar
  • 3 Eggs
  • 3 Tbls Lemon Juice
  • 1 Tbl Vanilla
  • 3/4 cup Chocolate Chips
Topping:
  • 1/4 C. mini chocolate chips
  • 1/2 C. caramel ice cream topping
  • 1/2 C. hot fudge ice cream topping
  • 1/4 C. chopped pecans
Instructions:
• Mix graham cracker crumbs and butter in bowl with fork & press into bottom & 1-1/2 inches up sides of spring form pan. (13 x 9 can be used in a pinch). (We used regular graham crackers because we had a bunch on hand)
• Beat Cream cheese and condensed milk together until creamy.
• Add remaining filling ingredients until well combined.
• Remove 1 cup of filling and set aside. Melt chocolate chips about 1 minute, (just until melted) and mix completely into the 1-cup reserved filling.
• Pour 1/2 of the white filling into crust, then the chocolate filling, then the last 1/2 of the white. Take knife and gently swirl colors.
• Bake at 300 for 1 hour and 15-30 mins-until light golden on top and edges are set and middle moves slightly. Cool completely & Chill. **(I place a pie pan full of water on the lower rack during cooking time for moisture. Also, I turn oven off and leave cake in oven to cool for 1-2 hours before removing from oven)
• Remove outer ring just before topping and serving
• Top outer edge and center with 1/4 cup mini choco. Chips & 1/4 cup Pecans (chopped). Drizzle melted chocolate chips and caramel topping all over top and drip down sides.

for the cookie dough:

Instructions:
1. Preheat oven to 325 degrees. Line 12 muffin tins with paper liners and set aside. Start out by making the cookie dough. Place softened butter into a medium sized bowl.
2. Stir in sugars until well incorporated.
3. Stir in vanilla, salt and flour. It may seem to dry at first, but it should all mix in.
4. Once flour is no longer visible, mix the dough with your hands.
5. The heat of your hands should help keep things sticking together. Mix in chocolate chips and form dough into a log with the same diameter as the oreo cookies.
6. Score the top of the dough to get even pieces and then slice. The dough will loose a little of its shape after cutting, so press the edges together and smooth out as best as you can to look more round.
7. Place dough rounds on top of oreo cookie and press down lightly to help it stick. If the dough circles were a little too big {like mine were}, just press the overlapping dough up to be flush with the side of the cookie, and then smooth the top.
8. Place these into the prepared muffin tins and set aside.
9. To make the cheesecake filling, whip cream cheese in large bowl. Slowly pour in sugar and flour. Scrape down sides and mix again briefly.
10. Whip in vanilla extract and egg until incorporated.
11. Scrape sides and whip again.
12. Spoon 1 heaping tablespoon of cheesecake mix over each cookie stack and spread on top and around cookie. The cheesecake mixture is thick, so this can be a little finicky. {This recipe makes just enough cheesecake to cover these, so be sure to start with smaller amounts covering the tops and adding extra spoonfuls from there.}
Bake for 20 minutes or until cheesecake is set completely. Cool to room temperature and then refrigerate until completely chilled. Once ready to serve, remove paper liners and top with mini chocolate chips.

Pumpkin Cake
  • ¼ pound unsalted butter
  • 1 cup all purpose flour
  • 1 tsp baking soda
  • ½ tsp ground cinnamon

  • ¾ cup 100% natural solid pack pumpkin
  • ½ cup nonfat buttermilk
  • ½ cup tightly packed light brown sugar
  • ½ cup sugar
  • 2 large eggs
  • ½ tsp vanilla extract
Instructions:
Grease and flour a 9-inch round cake pan. Combine together in a medium bowl flour, baking soda, spices, and salt. Set aside.
Place pumpkin and buttermilk in a small bowl and combine thoroughly. Set aside.
In a mixer fitted with a paddle attachment cream together the butter and sugars. Beat on medium for 2 minutes. Scrape down the sides of the bowl . Increase speed to high and beat an additional 2 minutes. Scrape down the bowl. Add the eggs and beat on medium for 30 seconds. Add the vanilla and beat on high for 30 seconds. With mixer on low alternate adding the dry ingredients with the wet ingredients into the mixing bowl. Mix until just combined. Remove the bowl from the mixer and use a rubber spatula to finish mixing the batter, until smooth and thoroughly combined.
Immediately pour the cake into the prepared pan, spreading evenly. Bake on the center rack of a preheated 325F oven. Bake for about 45 minutes or until a toothpick inserted comes out clean. Remove the cake from the oven and cool in the pan for 15 minutes at room temperature. Invert cake onto a plate or cake circle. Turn the cake upright and refrigerate until needed.
Butterscotch Walnut Filling
  • ¾ cup heavy cream
  • ¾ cup sugar
  • ¼ tsp fresh lemon juice
  • ¼ pound unsalted butter, cut into 4 1 ounce pieces
  • 1 cup walnuts, chopped
Heat cream in a saucepan over medium-low heat, until hot(do not allow to boil or simmer). Combine sugar and lemon juice in a separate saucepan. Stir with a whisk to combine(the sugar will resemble moist sand). Caramelize the sugar for 4 to 5 minutes over medium high heat , stirring constantly with a whisk to break up any lumps. Remove the saucepan from the heat. Add the hot cream, one half at a time.
Add the butter, on piece at a time, stirring to incorporate before adding the next piece. Cool in the refrigerator for 45 minutes before placing in the bowl of an electric mixer fitted with a paddle attachment. Beat on high for 2 minutes, until light(but not fluffy). Add the walnuts and stir to incorporate. Set aside for a few minutes.
Brown Sugar Icing
  • 2 cups tightly packed brown sugar
  • 1 cup heavy cream
  • ½ pound unsalted butter, cut into 8 1-ounce pieces
  • ¼ tsp cream of tartar
Heat brown sugar, heavy cream, 2 1-ounce pieces of butter, and ¼ tsp cream of tartar in a 3 quart saucepan over medium-high heat, stirring frequently while bringing the mixture to a boil. Allow the mixture to continue boiling while stirring constantly, for 2 minutes.
Transfer the bubble hot mixture to a 3-quart stainless steel bowl and allow to stand at room temperature for 1 hour before proceeding. Place the cooled mixture int the bowl of an electric mixer fitted with a paddle. Beat on low for 30 seconds. Then beat on medium for 2 minutes, while adding the remaining 6 pieces of butter, one at a time, until incorporated.
Scrape down the sides of the sides of the bowl. Increase the speed to high and beat for an additional 2 minutes. Scrape down the sides of the bowl and beat on high for an additional 1 minute until light and fully. Transfer 1 cup of icing to a pastry bag fitted with a large star tip, and place in the refrigerator until needed.

Assemble the cake:
Remove the cake from the fridge. Taking a serrated knife, split the cake horizontally. Spread butterscotch filing on the bottom layer of the cake, evenly spreading the filling to the edges. Place the pumpkin cake top layer on top of the butterscotch filling. Press gently but firmly to level the layers. Refrigerate the cake for 20 minutes. Remove the cake from the refrigerator and use a cake spatula to coat the top and sides of the cake with the icing. Pipe a circle of twenty brown sugar icing stars along the outside edge of the top of the cake. Refrigerate the cake for 30 minutes before cutting and serving.

Ingredients:
CRUST:
  • 2 cups walnut halves
  • 1/4 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup (1/2 stick) butter, melted
FILLING:
  • 2 cups heavy whipping cream
  • 3 cups (18 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 3 pkgs. (8 oz. each) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs, lightly beaten
CARAMEL SAUCE:
  • 1/4 cup (1/2 stick) butter
  • 1 cup packed brown sugar
  • 1/2 cup heavy whipping cream
  • 1 cup heavy whipping cream, whipped
Instructions:
FOR CRUST:
PREHEAT oven to 350° F.
PLACE nuts, brown sugar, flour and butter in food processor container; cover. Process until mixture resembles coarse meal. Press onto bottom of ungreased 10-inch springform pan.
BAKE for 5 minutes. Cool completely in pan on wire rack.
FOR FILLING:
HEAT cream in medium saucepan over medium heat just to boiling. Remove from heat; stir in morsels. Let stand for 5 minutes. Stir until chocolate is melted. Cool for 15 minutes.
BEAT cream cheese and granulated sugar in large mixer bowl on medium speed until smooth. Add chocolate mixture; beat on low speed until just combined. Add eggs; stir until just combined. Pour into prepared crust. Place pan on baking sheet.
BAKE for 55 to 60 minutes minutes or until edge is set but center still moves slightly. Cool in pan on wire rack for 15 minutes; run knife around edge of cheesecake. Cool for 30 minutes. Remove side of springform pan. Cool completely on wire rack. Cover; refrigerate for at least 4 hours or overnight.
FOR CARAMEL SAUCE:
MELT butter in small saucepan. Stir in brown sugar and cream. Bring mixture to a boil. Reduce heat to low; boil, uncovered, for 5 minutes. Cool slightly.
SERVE cheesecake with warm Caramel Sauce and whipped cream.

  • 2 1/2 cups (625ml) single cream
  • 8 egg yolks
  • 1/2 cup (110g) caster sugar
  • 2 teaspoons vanilla essence
  • Brioche loaf, sliced
  • 1/4 cup (40g) currants
  • 750g strawberries, hulled and halved
  • 1/4 cup (55g) brown sugar
Instructions:
Preheat oven to 200°C place the milk and cream in a medium saucepan over medium heat and cook until just boiling. Remove from the heat and set aside. Place the egg yolks, caster sugar and vanilla in a bowl and whisk to combine. Gradually whisk the warm milk into the egg mixture to combine. Arrange the brioche slices in the base of a lightly buttered 8 cup-capacity (2 litre) baking dish. Sprinkle some strawberries and currants between the slices, then pour over the custard mixture and top with the rest of the strawberries and currants. Sprinkle with brown sugar and bake for 20-25min or until golden.

This recipe is so easy and whats great is you can make it the night before and wrap the baking tray in tin foil and refrigerate over night so all the delicious flavors will soak into the brioche!

3. Cream the butter and sugar on high speed in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. On medium speed, add the eggs, 1 at a time, then the sour cream, zests, and vanilla, scraping down the bowl as needed. Mix well. Sift together the flour, cornstarch, salt, and baking soda. On low speed, slowly add the flour mixture to the butter mixture and combine just until smooth.
4. Pour the batter evenly into the pans, smooth the tops, and bake in the center of the oven for 40 to 45 minutes, until a toothpick comes out clean. Let cool in the pans for 30 minutes, then remove to wire racks and let cool to room temperature. If using 1 cake, wrap the second well and freeze.

  • 1 cup chocolate chips (semisweet or bittersweet)
Instructions:
To make the cookie dough, stir together the butter and sugar in a mixing bowl until smooth. Mix in the flour, then the vanilla and chocolate chips. Form the dough into a disk, wrap in plastic wrap and refrigerate until firm.
To make the ice cream, melt the butter in a medium saucepan over medium-high heat. Continue heating, stirring often, until the butter is a deep golden brown color, being careful not to burn it. Whisk in the heavy cream and heat until simmering. Meanwhile in a medium bowl, whisk together the brown sugar and the egg yolks until pale and fluffy. Once the cream mixture is warm, add a small amount to the bowl with the egg yolks, whisking constantly. Slowly whisk in the rest of the cream. Mix in the salt. Return the egg-cream mixture to the saucepan and heat until just slightly thickened, and the temperature reads 170-175˚ F on an instant-read thermometer. Immediately remove the mixture from the heat and pour through a fine mesh sieve into a bowl. Stir in the vanilla extract and the whole milk. Cover and chill thoroughly in the refrigerator.
Once the mixture is chilled, freeze in an ice cream maker according to the manufacturer’s instructions. Chop the disk of cookie dough into small chunks. As soon as the mixture is done churning, transfer to a bowl or airtight container and stir in the chocolate chips and the chunks of cookie dough. Store in the freezer until firm.

Ingredients:
  • 1 cup (2 sticks) of butter (room temperature)
  • 2 cups of sugar
  • 4 eggs (room temperature)
  • 3 cups of sifted self-rising flour (White Lily)
  • 1 cup of whole milk (room temperature)
  • 1 teaspoon pure vanilla extract (McCormicks)
  • 1/2 teaspoon butter flavoring

Instructions:
  1. Preheat oven to 350 degrees.
  2. Grease and flour (3) 8 inch cake pans.
  3. Using a mixer, cream butter until fluffy.
  4. Add sugar and continue to cream for about 7 minutes.
  5. Add eggs one at a time. Beat well after each egg is added.
  6. Add flour and milk (alternating to creamed mixture), beginning and ending with flour.
  7. Add vanilla and butter flavoring to mix; until just mixed.
  8. Divide batter equally into three cake pans.
  9. Hold each layer about 3 inches above your counter and carefully drop the pans flat onto counter several times to ensure release of any air bubbles. This will help you have a more level cake.
  10. Bake for 25 – 30 minutes (depending on your oven) until done.
  11. Cool in pans for 5 – 10 minutes.
  12. Remove and immediately wrap each layer in plastic wrap to seal in moisture. Cool completely on wire racks.
  13. Once cooled, you are ready to assemble your cake.

Here’s a little trick to add moisture into your layers:

- Combine 1 cup of sugar and 2 cups of water.
- Bring to boil and boil for approximately 3 minutes. Let cool.
- Pour liquid into a spray bottle or pouring bottle.

NOTE: to make things easier, make the cheesecake and crust on one day and the mousse and ganache on the next day. Cheesecake lasts longer than mousse. Keep this cake refrigerated and will last up to 2-3 days but is best eaten the day it's made.

Layer 1: Oreo Cookie Crust

  • 30-32 Oreo cookies (or chocolate sandwich cookies) for a high crust
  • 4 Tbsp unsalted butter (1/2 stick), melted
  • 1-2 tsp espresso powder (optional)

Crush cookies in a food processor or in a ziploc bag with a rolling pin or mallet. In a bowl or food processor, pour melted butter on top of the crushed cookies and add the espresso powder (optional), and mix or pulse well. Place the oreo mixture at the bottom of a springform pan. Smooth out the mixture with the bottom of a measuring cup or glass. Wrap the bottom of the pan in a double layer of aluminum foil. Place the crust in the freezer while you make the cheesecake.


Layer 2: Tall & Creamy Cheesecake

For the cheesecake:
  • 1 pound (two 8-ounce boxes) cream cheese, at room temperature
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt (I always use kosher salt)
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, at room temperature
  • 2/3 cup heavy cream (or sour cream or combination)

Put a kettle or pot of water on to boil. Preheat the oven to 325 degrees Fahrenheit.
Working in a stand mixer (or large bowl with hand mixer), preferably fitted with a paddle attachment, beat the cream cheese at medium speed until it is soft for about 4 minutes. With the mixer running, add the sugar and salt, and continue to beat another 4 minutes or so, until the cream cheese is light. Beat in the vanilla extract. Add the eggs one by one, beating for a full minute after each addition to yield a well-aerated batter. Reduce the mixer speed to low, and stir in the heavy cream or sour cream.
Give the batter a few stirs with a rubber spatula, just to make sure that nothing has been left unmixed at the bottom of the bowl, and scrape the batter into the springform pan. The batter should fill only half of the pan. Put the roasting pan in the oven and pour the the boiling water into the roaster to come halfway up the sides of the springform pan. (I pour half of the boiling water before putting in the pan to reduce my chances of dripping water in the cheesecake.)
Bake the cheesecake for 1 hour and 15-30 minutes, at which point the top will be lightly browned and may have risen just a little above the rim of the pan. Turn off the oven's heat, and prop the oven door open with a wooden spoon. Allow the cheesecake to luxuriate in its water bath for another hour.
After 1 hour, carefully pull the roast pan/springform pan setup out of the oven, lift the springform pan out of the roaster—be careful, there WILL be some hot water in the aluminum foil—remove the foil. Let the cheesecake come to room temperature on a cooling rack.
When the cake is cool, cover the top lightly and chill the cake for at least 4 hours or overnight. Make the mousse once the cheesecake has cooled.

Layer 3: Mousse au chocolat/French Chocolate Mousse

  • 6 ounces semisweet baking chocolate, chopped (I used Callebaut; use good chocolate)
  • 3 tablespoons unsalted butter, softened
  • 2 tsp espresso powder (added to intensify chocolate flavor, optional)
  • 3 eggs, separated
  • 1/2 teaspoon cream of tartar
  • 1/4 cup plus 2 tablespoons sugar
  • 1/2 cup heavy cream, cold (do not use half-frozen cream; the whipped cream will curdle)
  • 1/2 teaspoon vanilla extract

Place the chocolate and butter in a heatproof bowl, and place over a saucepan containing barely simmering water (or use a double boiler). Melt the chocolate and butter together and stir with a whisk until smooth. Add in the espresso powder. Remove from heat and cool slightly. Add the egg yolks to the chocolate, 1 by 1, beating with a whisk until incorporated. Set aside.
In another bowl, beat the egg whites until foamy. Add the cream of tartar, and continue to beat. Gradually whisk in 1/4 cup sugar, and continue beating until stiff peaks form.
Beat heavy cream in a chilled bowl with chilled beaters until it begins to foam and thicken up. Add the remaining 2 tablespoons sugar and vanilla. Continue to whip the cream until it holds soft peaks.
Gradually and gently fold the egg whites into the chocolate mixture to lighten it. Then, delicately fold in the whipped cream. Take care not over work the mousse but make sure you blend in the cream well. Place the mousse on top of the cooled cheesecake while still in the springform pan.
Cover the mousse cheesecake with foil, being careful to not let it touch the mousse. (If your springform is too small for this, just use less mousse in the cheesecake and instead eat them in ramekins while you prepare the ganache!) If making the ganache immediately, place mousse-covered cheesecake in the freezer as you make the ganache (the cheesecake should NOT be in the freezer for more than 30 minutes). If making the ganache later, place the cheesecake in the refrigerator for a few hours. Either way, the ganache must be cool before you can pour it on top of the cheesecake.

Top layer: Espresso Ganache

  • 1/2 cup heavy cream
  • 4.5 ounces bittersweet chocolate, chopped (I used Callebaut semi-sweet and milk chocolate)
  • 1 tsp espresso powder (optional)
  • 1 1/2 tsp dark rum (I used vanilla extract instead)

Heat the cream in a small sauce pan over medium heat. Heat it up just BEFORE it boils. Place the chocolate in the cream, and remove from heat. Stir the mixture until smooth. Stir in the espresso powder and rum or vanilla extract. Allow the ganache to cool for about 15 minutes before pouring the mixture on top of the mousse cheesecake.
Release the springform pan. With an offset spatula, smooth the ganache while starting at the center of the cake and working outward. (I did a "crumb" crust by placing a thin layer of the warm, not hot, ganache on top, allowed it to cool in the freezer for 30 minutes, then I poured more on the cheesecake after releasing the springfrom pan so that it could pour down the cake.) Don't do exactly what I did, though. Just pour ganache on top once it has cooled. Keep in mind that the cold temperature of the cake will cause the ganache to firm up quickly, and you may have to pour more on top.
Save the rest of the ganache for decorations (if you whip the ganache when it's cold, you can pipe a beautiful decoration) or save it for something else.

  • 2 cups full-fat plain yogurt

Instructions:
In a small saucepan, combine juice concentrate and sugar over medium-low. Cook, stirring, until sugar is dissolved, 3 minutes.

Ingredients:
  • 6 brownie rounds (recipe follows)
  • peanut butter cream cheese mousse (recipe follows)
  • lots and lots of peanut butter cup pieces (I chopped up about 15 Reese’s Peanut Butter Cups)
  • chocolate ganache (recipe follows)
Brownie Rounds:
  • 7 TBSP unsalted butter, melted
  • 1 cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • ½ tsp vanilla extract
  • ¼ cup cocoa powder ( I used Green and Blacks)
  • ½ cup all-purpose flour
  • ¼ tsp baking powder
  • pinch of salt
  • ½ cup semi-sweet chocolate chips
Preheat oven to 325F.
Butter and flour Six 4 ½ -inch Diameter Spring Form Pans. Set aside.
Using a stand mixer with the paddle attachment, mix together butter and sugar, about 2 minutes.
Add in egg, egg yolk, and vanilla. Beat another minute.
Pour in cocoa, flour, baking powder and salt. Mix on low speed until fully incorporated.
Fold in chocolate chips until completely distributed throughout the brownie batter.
Using measuring cups, pour a heaping 1/3 of a cup into each of the 6 prepared pans. If there is any batter left over, try to as evenly as possible, add to the prepared pans.
Bake for 20-23 minutes.
Remove from oven and let cool.
Peanut Butter Cream Cheese Mousse:
  • ½ cup whipping cream, chilled
  • 5 ounces cream cheese, at room temperature
  • 1/3 cup plus 2 TBSP powdered sugar
  • 1/3 cup peanut butter
Using a stand mixer with the whisk attachment, whisk the whipped cream on high until stiff peaks form.
Place into a bowl and set aside.
Add the cream cheese and peanut butter and whisk on medium speed, until fully incorporated. Add powdered sugar and mix until combined.
Add whipped cream back into bowl and whisk on medium high until peanut butter mixture and whipped cream are fully incorporated and the texture is light and fluffy.
Place into a medium sized bowl and set in fridge while brownies fully cool. At least 30 minutes.
Chocolate Ganache:
  • 4 ½ ounces semi-sweet chocolate, chopped finely
  • ½ cup heavy whipping cream
Place chocolate in a medium bowl.
In a small saucepan bring cream to a boil. Once the boil starts, pour over chocolate.
Let sit 5 minutes.
Whisk until mixture is smooth and glossy.


To Assemble the Torte:
Remove brownie from spring form pans. If still too warm, place in freezer for about 10 minutes.
Place one brownie circle on a plate. Add about a 1/8 cup of peanut butter mousse (I added much more to mine and actually doubled the recipe…but for photo reasons only. That much filling would be too much).
Scatter a handful of peanut butter cups.
Place another brownie round on top of the that. Then add another 1/8 cup peanut butter mousse. Then peanut butter cups.
Place third and final brownie round on top of second layer. Add a ¼ cup for the top layer of peanut butter mousse. And more peanut butter cups.
Pour ½ the ganache over the top of the torte. It might take some peanut butter cup pieces with it down the side. Just add more on top, you know you wanted to anyway.

Cake:
  • Nonstick vegetable oil spray

  • 1 large egg
  • 1 large egg white
  • 1/2 cup plus 1 tablespoon all-purpose flour
  • 1/2 cup plus 1 tablespoon cake flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 cups (packed) dark brown sugar
  • 6 tablespoons (3/4 stick) unsalted butter, room temperature
  • 1/2 teaspoon vanilla paste or vanilla extract
  • 1/2 teaspoon kosher salt
  • 1/2 cup plus 2 tablespoons buttermilk
  • 2 tablespoons cocoa nibs
  • 1 tablespoon finely ground espresso beans
Black Pepper Icing :
  • 1 cup sugar, divided
  • 1/4 teaspoon kosher salt
  • 3 large egg whites, room temperature
  • 1/2 teaspoon freshly ground black pepper
Instructions:
Filling:
Combine chocolate and salt in a large bowl; place a fine-mesh strainer over bowl and set aside. Pour 1 tablespoon cream into a small bowl. Sprinkle gelatin over and let stand until softened, about 10 minutes.
Meanwhile, bring remaining cream and 1 tablespoon sugar to a simmer in a small saucepan, stirring to dissolve sugar. Whisk yolks and remaining 1 tablespoon sugar in a medium bowl. Gradually whisk in hot cream mixture; return to saucepan. Cook over medium heat until mixture thickens slightly and your finger leaves a path on the back of a spoon when drawn across, about 3 minutes. Remove from heat.
Add gelatin mixture to cream mixture; stir to dissolve. Pour through prepared strainer into chocolate. Let stand for 1 minute; whisk until chocolate is melted and mixture is smooth. Whisk in crème fraîche. Using an electric mixer, beat filling until well blended, about 2 minutes. Press a sheet of plastic wrap onto surface of filling; chill overnight.
Cake:
Preheat oven to 350°. Coat the bottom and sides of three 9" cake pans with nonstick spray. Line bottom of pans with parchment-paper rounds.
Sift cocoa powder into a medium bowl. Whisk in egg and egg white. Gradually whisk in 1/2 cup plus 2 tablespoons lukewarm water; whisk until smooth. In a separate medium bowl, whisk both flours and next 2 ingredients.
Using an electric mixer, beat brown sugar, butter, vanilla, and salt in a large bowl, occasionally scraping down sides of bowl, until smooth, about 2 minutes. Gradually beat cocoa mixture into butter mixture. Beat in flour mixture in 3 additions, alternating with buttermilk in 2 additions, beginning and ending with dry ingredients. Fold in cocoa nibs and ground espresso. Divide batter among pans; smooth tops.
Bake cakes until a tester comes out clean when inserted into center, about 17 minutes. Let cakes cool in pans set on wire racks for 5 minutes. Invert cakes onto racks; remove pans and let cakes cool completely. DO AHEAD: Can be made 1 day ahead. Wrap cakes individually in plastic wrap and store at room temperature.
Place 1 cake layer on a plate. Stir filling to loosen. Spread half of filling (about 1 cup) over cake in an even layer. Place second cake layer on top of filling. Spread remaining filling over in an even layer. Place remaining cake layer on top. Chill cake for 1 hour.
Black Pepper Icing:
Mix 1 tablespoon sugar and salt in a small bowl; set aside. Attach a candy thermometer to side of a small saucepan; add remaining sugar and 1/2 cup water to pan. Stir over medium-low heat until sugar dissolves. Increase heat and boil without stirring, occasionally swirling pan and brushing down side with a wet pastry brush, until thermometer registers 240°, about 10 minutes.
Meanwhile, place egg whites in the bowl of a stand mixer fitted with a whisk attachment. Beat at medium speed until frothy. With machine running, gradually add reserved sugar and salt from small bowl.
Gradually add hot syrup from saucepan to egg whites, beating at medium-high speed and allowing syrup to drizzle down sides of bowl. Continue beating whites until stiff and cool, about 20 minutes. Add pepper; beat until well blended.
Immediately spoon topping onto cake. Smooth over top and sides. Working quickly, swirl icing decoratively. DO AHEAD: Cake can be iced 1 day ahead. Cover with a cake dome; chill. Let stand at room temperature for 1 hour before serving. To brûlée the icing, use a kitchen torch to toast icing in spots.
Note: Let frosting layers set fully before adding the next layer of cake. You may use an 8" cake pan for thicker layers.

Ingredients:
  • 3 1/2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup sugar
  • 2 tablespoons butter
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup buttermilk
  • 1 cup pumpkin puree
  • Canola oil for frying
Instructions:
In a large bowl, whisk together the flour, baking powder, salt, spice and sugar. Whisk together all of the remaining ingredients (except for the canola oil) in a second, medium bowl. Make a well in the center of the dry ingredients. Pour the wet ingredients into the dry ingredients, and stir them around the bowl until the mixture is well combined. Turn out onto a lightly floured surface, rolling the donut dough to approximately1/4-1/2″ thick. (I know this will seem quite thin, but the donuts puff up immensley while frying). Cut with a donut cutter.
Heat 2 inches of oil in a large skillet over medium-high heat. When the oil is hot, gently slide the donuts into the oil, frying on the first side until the edges of the donut are lightly browned, flip carefully and allow to cook on the other side until lightly browned. Remove and dunk immediately into buttermilk glaze. Allow to air dry on a cooling rack before serving.
Buttermilk Glaze
  • 3 cups powdered sugar
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla
Whisk together in a small bowl until smooth. Dip hot donuts in the glazed, then allow to air dry on a cooling rack

  • 15 ounce can pumpkin
  • 1 stick (8 tablespoons) unsalted butter
  • 3/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 3/4 cups powdered sugar
  • 1/4-1/2 cup heavy cream (start w 1/4 cup and add a little more cream if needed)
Instructions:
1. Preheat oven to 350 degrees F. and spray a jelly roll pan with non stick cooking spray.
2. Place cake mix, eggs, oil, milk, pudding, sour cream and pumpkin into a stand or electric mixer, beating until well combined, about 1 1/2 minutes. Pour into prepared pan, spreading evenly.
3. Place butter into a microwave safe bowl and melt, about 30-40 seconds. Add brown sugar and cinnamon to bowl, mixing until combined. Drizzle mixture evenly over cake then take a knife and run it through to swirl.
4. Bake cake for 30-35 minutes, until cooked through and remove. Place powdered sugar and cream into a large bowl and mix until creamy and smooth. Drizzle over warm cake then let cool for 20 minutes before cutting into squares. Refrigerate if not serving same day. Enjoy with milk!

FOR THE CHEESECAKE LAYER
  • three 8-0z. packages of cream cheese, room temperature
  • 1 1/3 c. sugar
  • 3 Tbsp. corn starch
  • 1 Tbsp. pure vanilla extract
  • 2 extra large eggs
  • 2/3 c. heavy or whipping cream
Preheat oven to 350 degrees F.
Butter generously a 9 inch spingform pan. with aluminum foil, cover the bottom & extending all the way up the sides.
Put one package of the cream cheese, 1/3 cup of the sugar, and the cornstarch in a large bowl & beat with an electric mixer on low until creamy, about 3 minutes, scraping down the bowl a couple of times. Blend in the remaining cream cheese, one package at a time, scraping down the sides of the bowl after each. Increase the mixer speed to medium & beat in the remaining 1 cup sugar, then the vanilla. Blend in the eggs, one at a time, beating well after each addition. Beat in the cream just until it’s completely blended. Be careful not to overmix!
Gently spoon the batter into the foil-wrapped springform & place it a large shallow pan containing hot water that comes about 1 inch up the sides of the springform. Bake the cake at 350 degrees F until the edges are light golden brown & the top is slightly golden tan, about 1 1/4 hours. Remove the cake from the water bath, transfer to a wire rack, & cool in the pan for 2 hours, cover with plastic wrap & refrigerate (while still in pan) until it’s completely cold, about 4 hours. Place the cake in the freezer overnight. Leave in the freezer until your ready to assemble the cake.
CARROT CAKE
  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 3/4 tsp. salt
  • 1/3 tsp. baking soda
  • 1/2 c dark raisins
  • boiling water to cover raisins
  • 4 extra large eggs
  • 2 c. sugar
  • 1 c. veggie oil
  • 1/4 c. heavy or whipping cream
  • 1 Tbsp. vanilla
  • 2 c. peeled & finely grated carrots
  • 3/4 c finely chopper walnuts
  • 3/4 c. peeled, cored & minced apples
Preheat the oven to 325 degrees F.
Generously butter the bottom of & sides of three 9-inch round layer cake pans. (you’ll need three layers, 2 for the cake & one to break up into crumbs for the top). VERY IMPORTANT: Line the bottom of all 3 pans with parchment or waxed paper (don’t let the paper come up the sides).
Sift the flour, baking powder, cinnamon, salt, & baking soda together in a medium bowl & set aside.
Place the raisins in a small saucepan, cover with boiling water, cover the pan, & let soak for 20 minutes until nice & plump. Drain well & let stand on a paper towel.
Meanwhile, beat the eggs in a large bowl with an electric mixer on high until light yellow, about 5 minutes. With the mixer still running, gradually add the granulated sugar then slowly drizzle in the oil, then the cream & vanilla. When the batter is light golden & airy, it’s ready (this usually takes 15-20 minutes of beating). Stir in the flour mixture with a wooden spoon, then stir in the carrots, apple, walnuts & raisins. Divide the batter evenly between the 3 cakes pans & bake until the centers come out with moist crumbs., about 45 minutes. Let the cake cool in the pan on a wire rack for 15 minutes, then turn them out on to the rack & peel off the paper liner. Let the cake cool completely, about 2 hours, then wrap each layer & refrigerate.
CREAM CHEESE FROSTING
  • three 8 oz. packages of cream cheese, room temperature (use full fat only)
  • 2 sticks, unsalted butter, room temperature
  • 6 c. sifted confectioners’ sugar
  • 1 Tbsp. vanilla
  • 1/4 c. heavy or whipping cream
Beat the cream cheese & butter together in a medium bowl with a mixer on high. Add the confectioners’ sugar, then the vanilla beating until smooth. With the mixer running, gradually add the cream, & beat until the frosting looks whipped & creamy. Add a little more cream if necessary until it’s easy to spread. Set out the carrot cake layer & break the least attractive one into crumbs.
TO ASSEMBLE :
Place one of the remaining 2 layers of cake top side down on a cake plate. Spread with some of the frosting. Release & remove the ring of the springform pan, then remove the frozen cheesecake from the bottom of the pan. Place the cheesecake on top of the frosted layer of carrot cake top side down & spread with some icing. Top the frosted cheesecake with the remaining layer of cheesecake, top side up. Ice the top & sides of the cake with remaining frosting. Decorate the top edge of the cake with a ring of the cake crumbs about 2 inches wide. Refrigerate the cake until ready to serve (it takes about 2 hours for the frozen cheesecake layer to thaw). Use a sharp straight edge knife to cut in. Not serrated)
